高筋面粉 78.9%
特幼面粉 21%
奶粉 7.5%
红糖 16.6%
盐 1.1%
酵母 2%
鸡蛋 11.2%
奶水 31.9%
牛油 8.2%
汤种 31.5%
-我用 300g x%
-
之前
用幼糖 15.7%,这次改用红糖 16.6%
-面团:笼网吐司模 550g, Bun 75g x 1粒
-食谱来之 (65度c汤种面包 PG 19)
